Here is a simple recipe for Masala Dosa:
Ingredients:

  • 1 cup urad dal (black gram lentils)
  • 3 cups parboiled rice
  • 1/2 cup flattened rice (poha)
  • Salt to taste
  • Oil for cooking dosa
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 1/2 teaspoon mustard seeds
  • 2 green chilies, chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 cup boiled and mashed potatoes
  • 1/4 cup chopped coriander leaves

Instructions:

  • Soak urad dal and rice separately in enough water for 5-6 hours. Also, soak the flattened rice in water for 30 minutes.
  • Grind the soaked urad dal and flattened rice together to form a smooth batter. Do the same with the rice separately. Mix both batters, add salt to taste, and keep aside for fermentation for 6-8 hours or overnight.
  • Heat oil in a pan and add cumin seeds and mustard seeds. When they start spluttering, add onions and green chilies and sauté until the onions turn translucent.
  • Add turmeric powder, red chili powder, and asafoetida to the pan and mix well.
  • Add boiled and mashed potatoes, salt to taste, and chopped coriander leaves to the pan and mix everything well. This is the filling for the dosa.
  • Heat a non-stick pan or a dosa tawa and spread a ladleful of batter on it to form a thin dosa. Drizzle oil around the edges and cook until the bottom turns golden brown.
  • Place a portion of the filling on one side of the dosa and fold the other side over it. Serve hot with coconut chutney and sambar.

  • 2 tablespoons chopped coriander leaves

Instructions:

  • Wash the toor dal and cook it in a pressure cooker with 2 cups of water until it is soft and mushy. Keep it aside.
  • Heat oil in a pot and add mustard seeds and cumin seeds. When they start spluttering, add asafoetida, curry leaves, and dried red chilies to the pot.
  • Add chopped onions and sauté until they turn translucent.
  • Add chopped tomatoes and sauté until they turn mushy.
  • Add chopped carrots, potatoes, and beans to the pot and mix well.
  • Add turmeric powder, sambar powder, and salt to the pot and mix everything well.
  • Add tamarind extract and 2-3 cups of water to the pot and bring it to a boil.
  • Let the vegetables cook until they are soft and tender. Add the cooked toor dal to the pot and mix everything well.
  • Let the sambar cook for another 5-10 minutes.
  • Garnish with chopped coriander leaves and serve hot with rice, idli, dosa, or vada.
